The solution is to focus on vegetables, which can turn into an ideal sauce for pizza. A simple white pizza, without tomatoes and with few genuine ingredients. Among the Holy pizzas we find the San Cataldo.
The zucchini cream strictly alla scapece, according to the Neapolitan tradition, and the mint coulis go well with the fresh anchovy crumble and give the pizza a delicate flavor. The pizza lends itself wonderfully to being paired with a large variety of vegetables.

SPECIAL FEATURES
The peculiarity of the pizza is that the fior di latte is hidden under the courgette cream, for a delicious surprise with every bite.
They are great protagonists of the summer, queens of seasonal pizzas: loved by pizza makers, from the North to the South of the Belpaese, especially for their versatility in the kitchen.
In Campania, making vegetables more appetizing is an art. Zucchini alla scapece - one of the cult dishes of Neapolitan cuisine - are fully included in the ranking of traditional culinary "works": strictly fried, the courgettes are then marinated in white wine vinegar and seasoned with mint.

The courgettes are cut into rings, sautéed with oil and garlic and salted. Fried in plenty of hot extra virgin olive oil, a few at a time.
As soon as they are golden, they will be drained and placed on a sheet of kitchen paper, in order to absorb excess oil. To prepare the cream, blend the courgettes with fresh mint, oil and salt.

Another important ingredient for pizza is anchovies, prepared with a crunchy crumble, which is a crumbled mixture made up of oil and breadcrumbs.
A perfect pizza for summer and spring, to be prepared when fresh courgettes are in season.
Extra virgin olive oil
Extra virgin olive oil is obtained exclusively through mechanical procedures, which allow to maintain all the properties of the olive fruit.
Basil
Originally from India, basil is typically used in Italian and Asian cuisines due to the marked scent of its leaves, which depending on the variety can be more or less sweet or pungent.
Cetara anchovies
The anchovies of Cetara, a small town on the Amalfi coast, are famous all over the world essentially for two products deriving from it: salted anchovies and anchovy sauce.
Fior di latte from Agerola
Fresh stretched curd cheese made from whole raw cow's milk. It can be prepared in various forms, from the round one, to the knot, to the braid according to the tradition of the dairy.
Zucchini alla scapece cream
The zucchini alla scapece are fried and seasoned with an emulsion of oil, wine vinegar, parsley and garlic.
Zucchini chips
Thinly sliced and baked zucchini, crunchy on the outside and soft on the inside.
Mint coulis
Mint pesto, or mint coulis, is a fresh-tasting sauce used to season pasta, to accompany meat or fish, and desserts.

A pizza that really deserves it! Excellent dough and perfect combination of ingredients. Fried appetizers are delightful! Perhaps the only flaw is the slightly small and spartan restaurant, which however gives you the opportunity to observe the pizza chef at work!
Came here with 3 other friends. Had 5 pizzas and one eggplant parmigiana. There was not one piece of food left on our table. Staff was extremely friendly, fast service, and great mood inside. We felt welcomed despite not speaking any Italian, and had a great time. 5/5 highly recommend
