THE CARBONARA
Carbonara is the famous "fried pizzella" that our grandmothers made us as children, which instead of the classic tomato sauce, hosts the timeless and indisputable carbonara sauce.
Ingrediants
- 4 Mediterranean tuna steaks
- 1 clove of garlic
- 1 stick of celery
- 1 carrot
- 1 kg of copper onions
- salt
- extra virgin olive oil

Preparation of the sauce
Chop celery and carrot with a knife, put them in a pan with oil and fry until the vegetables are tender and golden.
Slice the onions and add them, cook slowly so that the onions sweat and release all their water.
Also add the tuna and cook for about 3 hours over low heat with the onion.
Place the montanare on kitchen paper and then dress them with the Genoese sauce.
Bluefin tuna
Bluefin tuna (Thunnus thynnus) is the most prized species, but is rarely found in supermarket fishmongers and only a few restaurants use it to prepare their menus.
Extra virgin olive oil
Extra virgin olive oil is obtained exclusively through mechanical procedures, which allow to maintain all the properties of the olive fruit.
Caramelized onion
Typical onion of south Italy village, suitable to accompany any type of meat or fish. It is left to caramelize in a pan with vinegar and sugar (or honey) for an intense flavor.

A pizza that really deserves it! Excellent dough and perfect combination of ingredients. Fried appetizers are delightful! Perhaps the only flaw is the slightly small and spartan restaurant, which however gives you the opportunity to observe the pizza chef at work!
Came here with 3 other friends. Had 5 pizzas and one eggplant parmigiana. There was not one piece of food left on our table. Staff was extremely friendly, fast service, and great mood inside. We felt welcomed despite not speaking any Italian, and had a great time. 5/5 highly recommend
