A reinterpretation of the classic montanara, but served with typically Campania ingredients, a combination of taste between crispy raw ham and buffalo stracciatella.


Ingrediants

  • raw ham
  • buffalo stracciatella from Campania DOP
  • Montoro coppery onion
  • fresh basil
  • extra virgin olive oil

 

 

Preparation of the sauce

Cut the raw ham into cubes, fry it in a pan with the coppery Montoro onion and extra virgin olive oil.

Place the montanare on a serving dish and pour the ham seasoned with the onion, then add the buffalo stracciatella and a basil leaf. Serve still hot.

Stracciatella di bufala is a cheese prepared with buffalo milk: it is a fresh cheese, white color, made of cream and pieces of stretched curd.

Caramelized onion

Typical onion of south Italy village, suitable to accompany any type of meat or fish. It is left to caramelize in a pan with vinegar and sugar (or honey) for an intense flavor.
