THE GENOVESE

By montanara alla genovese, we mean exactly that famous "fried pizzella" that our grandmothers made us as children, which instead of the classic tomato sauce, hosts the timeless and indisputable Genoese sauce.

Sauce ingredients

  • 4 Mediterranean tuna steaks
  • 1 clove of garlic
  • 1 stick of celery
  • 1 carrot
  • 1 kg of copper onions
  • salt
  • extra virgin olive oil

 

 

 

Preparation of the sauce

Chop celery and carrot with a knife, put them in a pan with oil and fry until the vegetables are tender and golden.

Slice the onions and add them, cook slowly so that the onions sweat and release all their water.

Also add the tuna and cook for about 3 hours over low heat with the onion. Place the montanare on kitchen paper and then dress them with the Genoese sauce.
