Who said that pizza can't also be stuffed? Tradition tells us that it can be! 

The San Michele Arcangelo baked in the oven is, therefore, a lighter variant of the classic pizza margherita, a Neapolitan street food famous all over the world. It is one of the emblems of the creativity of Neapolitan cuisine and has an ancient history.

It was born when some chefs decided to use the classic pizza dough in a different way. Instead of being stretched out and opened, the pizza was sealed in the shape of a crescent and inside it was stuffed with different ingredients of Neapolitan cuisine: ricotta di Bufala Campana DOP, fior di latte di Agerola, Salame Napoli, sprinkled with Grana Padano Dop, basil. fresh, extra virgin olive oil. 
 

 

SPECIAL FEATURES

The secret lies in the choice of ingredients which must all come from the Campania region. The buffalo ricotta is a typical product of the southern area of ​​Italy, it is made in several regions: Campania, Lazio, Puglia, Molise. Where the breeding of Mediterranean buffaloes is most intense.

Obtained from the hot-acid coagulation of whey from milk processing, it can be eaten fresh or homogenized.

It is a grainy, soft, creamy dairy product with a low intensity lactic aroma.

The original recipe includes the addition of fior di latte from Agerola, the Napoli salami, a fundamental and absolutely irreplaceable ingredient for many recipes of popular Neapolitan cuisine, Grana Padano Dop, fresh basil and EVO oil.
