THE CLASSIC

Montanara pizza is one of the historical versions of the Neapolitan fried pizza, generally known as fried calzone. Like any good pizza, it requires attention and time to mature and develop its typical “pizza” aroma inside.

 

Ingredients for the sauce

  • peeled tomatoes
  • garlic onion
  • extra virgin olive oil
  • salt
  • basil
  • mozzarella cheese
  • grated Parmesan cheese

 

 

Preparation of the sauce

We fry our pizzas in boiling oil: one minute per side of the pizza. Lift them with a slotted spoon and lay them on a tray lined with absorbent paper. Prepare the sauce with tomato puree, a drizzle of oil and salt and cook for about 15 minutes. Season them with the freshly prepared sauce and a sprinkling of Parmesan cheese that can melt with the heat of the sauce. We also add a basil leaf. And here are the traditional mountain pizzas ready!
