“SOLIGO” EXTRA DRY SUPERIOR
The particular attention of the company in preserving and enhancing the characteristics of the land of origin of the vine gives the grapes unique characteristics. High quality raw materials are the basis of the constant commitment of over 600 suppliers, who bring excellent grapes to the cellar every year.
The winery is located at the base of splendid and steep hills just 50 km from Venice and not far from the Dolomites. The grapes grow in vineyards located in different areas of the province of Treviso. This allows a varied and diversified production but always representative of the territory.
The team of oenologists can afford to use traditional winemaking methods supported by a state-of-the-art analysis laboratory and a modern bottling line, in order to ensure typicality, safety and quality in every single bottle of the annual production.

Prosecco is a typical Italian white wine. It is mainly produced with the Charmat method and has a typical effervescence that is diversified into three types: still prosecco, sparkling prosecco and sparkling prosecco.
The Charmat method is ideal for the production of Prosecco, as it is a wine that bases its characteristics on immediate, primary pleasure rather than complexity. It is therefore a method by which the characteristics of those aromatic vines that express freshness, intense aromas and vibrant acidity are preserved intact.
Features
- Vinification: The grapes are harvested in September. In the cellar, the clusters are softly pressed and a slow fermentation then begins in steel tanks using selected yeasts. Sparkling with the Charmat Method;
- Color: Brilliant straw yellow with greenish reflections;
- Bouquet: Notes of yellow pear, Golden apple and hints of lavender and fern;
- Taste: Fresh, soft, balanced; persistence is driven by the flavor that characterizes the finish.

Vines and methods
Prosecco is made from white grapes belonging to vines located in extremely suggestive landscapes, characterized by the presence of a substrate of fluvioglacial material deposited in times prior to the last glaciation. The vine is called "Glera". To be regulated, those of Glera must make up at least 85% of the total grapes, while the remaining 15% can be made up of chardonnay, pinot grigio, verdiso, bianchetta trevigiana and other strictly regulated grapes.
The harvest of the base wine takes place in advance, to guarantee freshness, acidity and aroma. De-stemming is as important as the subsequent absence of maceration of the skins.
The fermentation of the must takes place by adding selected yeasts and inside large steel tanks, lined with a cavity (to maintain the temperature at 18-22 ° C); the process continues until, in the must, the alcohol and sugar remain constant (two consecutive measurements, between morning and evening). This is followed by racking to remove the lees and maturation to remove harmful substances.
Sugar
Alcoholic beverages contain not only alcohol, but also sugar and fat. For this reason, their consumption should be kept under control in particular by those with weight problems or blood sugar control.
Ethyl alcohol
In the food sector, the term alcohol means ethyl (or ethanol), which is the basis of the so-called alcoholic beverages, in variable percentages and estimated with the so-called alcohol content.
Must
Also called "white fermentation" is a winemaking technique that involves the immediate separation of the must from the skins, without maceration taking place. With this system it is possible to obtain white wines also from dark-skinned grapes.
Still wine Base
From the harvest of Chardonnay, Pinot nero, Pinot bianco or Meunier grapes, we obtain the basic still wine to which, once bottled, yeasts and sugars are added
Sparkling yeasts
Yeasts are unicellular fungi having a spherical, oval or elliptical shape. Microorganisms that intervene during the fermentation phase.
Phosphates
Dibasic ammonium phosphate is one of the most complete foods for yeast as it provides the yeasts with both phosphorus and nitrogen in readily assimilable ammonia form.

For all lovers of true Neapolitan pizza made by Marco, an authentic Neapolitan pizza maker, who, like an artist, doses all the ingredients and cooking times with wisdom and with love for tradition. A delight for the palate and the soul. Absolutely not to be missed.
Tasty Neapolitan pizza, Marco is a true professional and a welcoming and clean host, the most famous Margherita is digestible and tasty.
A pizza that really deserves it! Excellent dough and perfect combination of ingredients. Fried appetizers are delightful! Perhaps the only flaw is the slightly small and spartan restaurant, which however gives you the opportunity to observe the pizza chef at work!
Came here with 3 other friends. Had 5 pizzas and one eggplant parmigiana. There was not one piece of food left on our table. Staff was extremely friendly, fast service, and great mood inside. We felt welcomed despite not speaking any Italian, and had a great time. 5/5 highly recommend
