SAINT ROSALIA
Santa Rosalia pizza is a very imaginative recipe as well as a complete and nutritious dish.
A dish that is born, in fact, from the typical flavors of Sicilian cuisine such as pasta alla norma and therefore based on tomato sauce, fried aubergines and salted ricotta.
The salted ricotta together with the fior di latte of Agerola give it a strong taste, while the fried aubergines add flavor and texture to the dish.
The dough is soft and for the preparation we use only seasonal ingredients.

SPECIAL FEATURES
When the eggplant season arrives, we think about frying them to make our pizza tasty which, however, would not be complete without the addition of fresh basil leaves and, of course, a generous grating of strictly Sicilian ricotta salata.
The dough according to international regulations remains fundamental. With a movement from the center towards the outside and with the pressure of the fingers of both hands on the dough, which is turned over several times, the pizza maker forms a disc of dough so that in the center the thickness is no more than 0.25 cm.
Among the ingredients needed to form this pizza, we list: Eggplants take their name from the shape in which they are cut and which resembles pieces of mushroom.

Ricotta salata, used as a final touch on our pizza, does not have the classic soft texture. It is hard and is used grated to give it more flavor.
It is a variety of ricotta typical of Southern Italy. It is also called dry ricotta, as it is subjected to a treatment that "dries" it, losing at least 50% of water.
Later, the ricotta is also flavored with coarse sea salt, through an artisanal process. Another name of this product is “seasoned ricotta”, as it is aged for a period ranging from 10 to 30 days.
San Marzano DOP tomato
It is a tomato variety recognized as an Italian fruit and vegetable product with a Protected Designation of Origin. It has an elongated shape and is particularly suitable for quick cooking which allows it to preserve a more lively flavor.
Pachino tomatoes IGP
The Pachino tomato comes from a town in the province of Syracuse. For its nutritional properties it is recognized as an ingredient of absolute value in the Mediterranean diet. With a sweet taste, it is ideal for salads, cold pasta and pizza.
Fior di latte from Agerola
Fresh stretched curd cheese made from whole raw cow's milk. It can be prepared in various forms, from the round one, to the knot, to the braid according to the tradition of the dairy.
Salted sheep ricotta
It's a soft cheese produced with sheep's milk according to a traditional process. It is a typical product of Sicily, also produced in Sardinia, Campania, Lazio and other regions of Southern Italy.
Eggplant a mushroom
Mushroom eggplants are a typically summer side dish from Campania. In summer this vegetable is at its best for its not too bitter taste and not too spongy texture.

A pizza that really deserves it! Excellent dough and perfect combination of ingredients. Fried appetizers are delightful! Perhaps the only flaw is the slightly small and spartan restaurant, which however gives you the opportunity to observe the pizza chef at work!
Came here with 3 other friends. Had 5 pizzas and one eggplant parmigiana. There was not one piece of food left on our table. Staff was extremely friendly, fast service, and great mood inside. We felt welcomed despite not speaking any Italian, and had a great time. 5/5 highly recommend
