SPECIAL FEATURES

Raw ham is a very suitable topping for pizza. The Fiocco di prosciutto is obtained from the pork leg used to produce the famous culatello.

The pig comes from Italian farms of the controlled supply chain for the production of Prosciutto DOP.

On one side of the thigh the culatello is obtained and on the other the Fiocco, massaged and salted, is tied and matured in the same humid cellars where the culatello matures.

When cut, the Fiocco has a ruby red color with little fat, it is protected by the rind and "lard", like ham. With an intense aroma, sweet and delicate flavor, it was traditionally consumed on special occasions.

Burrata is a cheese of Apulian origin, characterized by a heart of filaments of pasta and cream, with an incredibly creamy consistency.
