Gorgonzola is one of the cornerstones of the Lombard dairy tradition. 

Since 1996, the year in which a Protected Designation of Origin product is recognized, the production specification governs all stages, which must take place exclusively in the defined geographical area.

Used in refined preparations by the most famous chefs of international cuisine, Gorgonzola is a real inspiration for every chef and recipe creator, because it always has an extra flavor to add and a surprising result to create.

Sweet Gorgonzola has a 'delicate', creamy and melt-in-your-mouth taste and has a well-present but non-invasive marbling.

Combinations in contrast are those with bitter or markedly salty flavors. In our case with Treviso radicchio. Ingredients that ensure a little consistency in our pizza.

 

 

Even with savory flavors, Gorgonzola goes very well, if we consider combinations with Trentino PGI speck or walnuts.

Another fundamental ingredient is Speck Alto Adige PGI. A characteristic product of the South Tyrolean gastronomic tradition that was born in this land from ancient recipes handed down generation after generation.

It owes its unique and unmistakable taste to the light spiciness with rosemary, juniper, bay leaf, a little salt and pepper and to the particular production method that combines light smoking with seasoning in fresh mountain air.
